Classic Fudgy Brownies
Rich, fudgy brownies with a shiny, crackly top
Ingredients
- 170 grams unsalted butter
- 300 grams granulated sugar
- 75 grams unsweetened cocoa powder
- 3 large eggs
- 1 teaspoons vanilla extract
- ½ teaspoons fine salt
- 90 grams all-purpose flour
- 100 grams semisweet chocolate chips
How to make it

Preheat oven to 175°C (350°F). Line an 20x20 cm (8x8 inch) pan with parchment paper, leaving an overhang on two sides.

Melt the 170 grams unsalted butter in a medium saucepan over low heat, or in the microwave in a heatproof bowl.

Stir 300 grams granulated sugar and 75 grams unsweetened cocoa powder into the melted butter until fully combined and smooth.

Let the mixture cool slightly, then beat in 3 large eggs one at a time, followed by 1 teaspoons vanilla extract and ½ teaspoons fine salt. Beat vigorously for about 1 minute until glossy — this helps create the crackly top.

Sift in 90 grams all-purpose flour and fold gently with a spatula until just combined. Do not overmix.

Fold in the 100 grams semisweet chocolate chips, then pour the batter into the prepared pan and spread evenly.

Bake until a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).

Let the brownies cool completely in the pan on a wire rack before lifting out and slicing into squares.
